Sophisticated Chocolate Bourbon Balls

1 ¼ c. crushed chocolate wafer cookies
1 c. powdered sugar
2/3 c. toasted chopped pecans
4 T. butter, melted
¼ c. bourbon
1 t. instant espresso powder
¼ t. kosher salt
1/3 c. turbinado or white sanding sugar

  1. Combine all ingredients except sanding sugar in bowl.
  2. Refrigerate for at least 1 hour or until firm.
  3. Scoop mixture by rounded teaspoonful, then roll into 1” balls with your hands.
  4. Roll balls in sanding sugar to coat, put on rimmed baking sheet, cover with plastic wrap and refrigerate at least 12 hours.
    *Will keep for 2 weeks.
