Sno-Ball Mug Cake
Ingredients
  • 1 large egg
  • 3 T. milk
  • ¼ t. vanilla extract
  • ¼ t. coconut extract
  • 1 drop pink liquid food coloring
  • ¼ c. sugar
  • ⅓ c. self-rising flour
  • Pinch of kosher salt
  • ¼ c. Marshmallow Fluff or mini marshmallows
  • Cool whip
  • ¼ c. shredded coconut (sweetened or unsweetened)
Instructions
  1. In large mug, whisk together the egg and milk with a fork.
  2. Stir in vanilla and coconut extracts, food coloring and sugar.
  3. Add flour and salt.
  4. Beat batter until smooth.
  5. Swirl in the Marshmallow fluff.
  6. Divide batter between two mugs.
  7. Microwave separately for 1 ½ to 2 ½ minutes each until risen and firm.
  8. Top each with a dollop of Cool Whip and shredded coconut.
Notes
*****To color your coconut, combine a handful of coconut and a drop of liquid food coloring in a ziplock bag. Knead to spread the color.
