Snacky S’Mores Popcorn Balls

SNACKY S’MORES POPCORN BALLS
PAM
1 c. mini marshmallows
1/3 c. powdered sugar
2 T. light corn syrup
1 T. butter
1 T. unsweetened cocoa powder
Kosher salt
1 t. vanilla
5 c. salted popcorn, not buttered
½ c. broken salted pretzels
3 graham crackers, broken into bite-sized pieces

  1. Lightly coat baking sheet and rubber spatula with PAM.
  2. Cook ½ c. of marshmallows, the sugar, syrup, butter, cocoa powder, 1 T. water and ¼ t. salt in large pot over medium heat, stirring constantly with rubber spatula, until mixture melts completely, 3-5 minutes.
  3. Remove pot from heat and stir in vanilla.
  4. Add popcorn, pretzels, graham crackers and remaining marshmallows, and stir with rubber spatula until combined.
  5. Coat inside of 1 c. dry measuring cup with PAM.
  6. Scoop up a heaping cup of popcorn mixture and unmold it onto baking sheet. Repeat for total of 6 mounds.
  7. Spray your hand generously with PAM.
  8. Press each mound firmly with both hands to form a tight popcorn ball.
  9. Let sit at room temp for 20 minutes to fully set.
  10. Store in airtight container for up to 2 days.
