Sizzling Honey-Chipotle Glazed Flank Steak

1 T. olive oil
1 T. minced garlic
1 t. ground cumin
Kosher salt/black pepper
2 T. minced canned chipotle in adobo sauce
1 T. honey
Juice of 1 lime
Zest of 1 lime
1 lb. flank steak

  1. Position oven rack 6” below broiler and heat broiler to HIGH.
  2. Line large rimmed baking sheet with foil.
  3. Combine olive oil, garlic, cumin, salt and pepper in 1 quart saucepan over medium heat.
  4. Cook, stirring occasionally for 2 minutes.
  5. Add chipotle and honey and stir until heated through.
  6. Remove from heat and add lime juice and zest.
  7. Rub steak with olive oil and season with salt and pepper.
  8. Transfer to baking sheet and broil, turning once, until slightly browned (about 3 minutes per side for medium rare.)
  9. Spread glaze over top of steak and broil until it begins to bubble, 1-2 minutes.
  10. Transfer to cutting board, rest 5 minutes and slice against the grain and serve.
