Ingredients
  • 1-2 fryers, cut into pieces, seasoned
  • Olive oil or vegetable oil
  • Salt, red/black pepper, garlic powder
  • 2 large Vidalia onions, thinly sliced
  • 1 of each color bell pepper (red, yellow, orange, green), cut into strips
  • 3 T. minced garlic
  • 1 (8-oz.) carton sliced mushrooms
  • 1 packet of McCormick’s brown gravy mix
  • 2 c. chicken broth
  • 1 regular size can diced tomatoes with liquid
  • Fresh dill
  • Water
Instructions
  1. In large pot, heat oil. Brown chicken on both sides. Drain on paper towels.
  2. After browning, drain off excess oil from pot.
  3. Add onions and bell peppers and saute for 2-3 minutes.
  4. Add the garlic, mushrooms, tomatoes, gravy mix and stir to mix well.
  5. Add the broth and stir until all ingredients are blended.
  6. Nestle chicken into the gravy mix. Add enough water so that the gravy covers chicken by 2”.
  7. Simmer for 45 minutes or until chicken is tender and gravy thicken.
  8. Add fresh dill or parsley or green onions.
Notes
***Serve with hot rice, mashed potatoes or egg noodles.
