Ingredients
  • 12-16 oz. fresh small okra (if using frozen, thaw, blot dry)
  • Extra virgin olive oil
  • ½ t. ground coriander
  • ½ t. ground cumin
  • ½ t. smoked paprika
  • ½-1 t. red pepper (depending on how peppery you like it)
  • ½-1 t. kosher salt
  • Lemon wedges, garnish
  • Ranch Dressing or your favorite dipping sauce
Instructions
  1. Preheat oven 450.
  2. Toss the okra with the olive oil to coat.
  3. In a bowl, combine the seasonings.
  4. Toss the okra in the seasoning and shake off excess.
  5. Spread the okra on a baking sheet that has been lined with foil and sprayed with PAM.
  6. Roast in oven for 12-15 minutes or until tender, turning once.
  7. Remove from oven and sprinkle with paprika.
  8. Serve with your favorite dipping sauce and squeezes of fresh lemon.
