Ranch-Style Fried Zucchini

RANCH-STYLE FRIED ZUCCHINI
1 ½ c. seasoned Cajun breading batter or fish fry/cornmeal type of mixture
2 eggs
¼ c. milk
3 small zucchini, cut into ¼” slices
Canola oil, for frying
Ranch dressing

  1. Place the batter mixture in one bowl.
  2. In another bowl, beat eggs and add milk and whisk together.
  3. In deep fryer or heavy saucepan, heat 2 c. of oil to 350.
  4. Working in small batches, dip zucchini into batter, then in egg wash, then back in batter.
  5. Gently place in hot oil and fry until golden brown on both sides.
  6. Drain on paper towels.
  7. Serve with Ranch Dressing or your favorite dipping sauce.
    *You can also use Bisquick mix that is seasoned with your favorite herbs, etc. instead of the Cajun batter.
