QUICK CORN, BACON, BEER AND CHEESE DIP
2 (8-oz.) pkg. of cream cheese, room temp
1 c. IPA beer
5 oz. shredded Parmesan cheese
1 c. shredded mozzarella
1 c. shredded provolone
1 t. black pepper
1 t. paprika
1 t. garlic powder
¼ c. chopped cilantro or parsley
1 (11-oz.) can Mexicorn, drained
1 ¼ c. cooked bacon crumbles
Extra bacon crumbles, garnish
Extra chopped cilantro/parsley, garnish

  1. Preheat oven 350.
  2. Place cream cheese, Parmesan, ½ c. Mozzarella and ½ c. Provolone, pepper, paprika and garlic powder in blender or food processor.
  3. Blend until fully combined. It will be thin.
  4. Pour mixture into large bowl and stir in corn, bacon, cilantro, remaining Mozzarella and Provolone. Mix well.
  5. Spoon mixture into oven safe baking dish and sprinkle with extra bacon crumbles.
  6. Bake 15-20 minutes or until mixture is hot and bubbly.
  7. Sprinkle with extra cilantro or parsley and serve with chips.
