Oven-Baked Green Tomatoes and Zucchini
Ingredients
- ½ c. buttermilk
- 1-2 t. Tabasco
- 1 egg white
- 1 c. cornmeal
- Sea salt, black pepper
- 2 large green tomatoes, cut into ¼” slices
- 1-2 zucchini cut into ¼” slices
- PAM
- Zesty Ranch Dressing or Blue cheese Dressing or Marinara Sauce
Instructions
- Preheat oven 450.
- Line a baking sheet with parchment paper.
- Combine buttermilk, Tabasco, egg white in a shallow dish.
- Mix the cornmeal with salt and pepper in another dish.
- Season the tomatoes and zucchini slices.
- Dip the tomato and zucchini slices into the buttermilk mixture and then the cornmeal mixture. Gently turn to coat both sides.
- Spray a large nonstick skillet with PAM. Place over medium heat. Add half of the tomato and zucchini slices in a single layer and cook until browned on both sides, about 2-3 minutes. Wipe out skillet and do remaining slices the same.
- Transfer slices to the baking sheet and bake until the tomatoes and zucchini are golden brown on both sides.
- Serve hot with your favorite dipping sauce.
