Ingredients
  • 1 ½ c. sugar
  • ⅓ c. cornstarch
  • ¼ t. salt
  • 1 ½ c. cold water
  • ½ c. fresh lemon juice
  • 5 eggs, separated
  • 2 T. butter
  • 1 T. grated lemon rind
  • 1 baked 9” pie shell
  • ¼ t. cream of tartar
  • ½ c. plus 2 T. sugar
  • ½ t. vanilla
Instructions
  1. Combine 1 ½ c. sugar, cornstarch and salt in heavy saucepan. Mix well.
  2. Gradually add water and lemon juice, stirring until mixture is smooth.
  3. Beat egg yolks until thick and lemon colored.
  4. Gradually stir into lemon mixture.
  5. Add butter and cook over medium heat, stirring constantly, until thickened and bubbly.
  6. Cook 1 minute, stirring constantly. Remove from heat and stir in lemon rind.
  7. Pour into baked pie shell.
  8. Combine egg whites, at room temperature, and cream of tartar. Beat until foamy.
  9. Gradually add remaining sugar, 1 T. at a time, beating until stiff peaks form.
  10. Beat in vanilla.
  11. Spread meringue over filling, sealing to the edge of pastry.
  12. Bake 350 for 12-15 minutes or until golden brown.
  13. Let cool at room temperature. Keep refrigerated.
