No-Bake Peanut Butter Bars
NO-BAKE PEANUT BUTTER BARS
2 c. semi-sweet chocolate chips
½ c. creamy peanut butter
2 sticks butter, softened (more for greasing pan)
1 c. chunky peanut butter
2 c. powdered sugar
1 (12-oz.) box vanilla wafers
1 (12-oz.) bag semi-sweet mini chocolate chips
½ c. chopped peanuts
- TOPPING: Using double boiler or microwave, melt chocolate chips and creamy peanut butter. Let cool a few minutes while you make the bars.
- BARS: Grease 9×13” pan with butter. Using hand mixer, mix together butter and chunky peanut butter until smooth. Stir in powdered sugar, a cup at a time.
- Add wafers to food processor and process until they are crumbs.
- Add crumbs and mini chips to peanut butter mixture and mix until just combined.
- Spread evenly into buttered pan and set aside.
- Pour topping over base. Spread out evenly and sprinkle with chopped peanuts.
- Refrigerate for at least 1 hour. Cut into 20 bars.
- Keep refrigerated. Bars softened at room temp.
