Ingredients
  • 2 c. sugar
  • ½ c. light corn syrup
  • ½ c. water
  • 2 egg whites
  • ⅛ t. salt
  • 1 t. vanilla
  • 1 c. coarsely chopped pecans or nuts of your choice
Instructions
  1. Heat sugar, corn syrup and water over low heat, stirring constantly, until sugar is dissolved.
  2. Cook over medium heat, without stirring, to 260 on a candy thermometer.
  3. Beat egg whites and salt in small mixing bowl until stiff peaks form.
  4. Transfer beaten egg whites to a larger bowl.
  5. While beating on medium speed, slowly pour the hot sugar/syrup mixture into the egg whites.
  6. Add the vanilla and beat until mixture holds its shape and becomes dull, about 10-13 minutes.
  7. Stir in nuts.
  8. Spread lightly buttered loaf pan. Pat smooth with fingers and cut into 1” squares. You can also drop onto waxed paper with a spoon to give the ball look.
Notes
*****Keep in airtight container for 2 weeks. You can also keep in refrigerator.

MICROWAVED DIVINITY FUDGE:
Ingredients
  • 2 c. sugar
  • ⅓ c. water
  • ⅓ c. light corn syrup
  • ¼ t. salt
  • 2 egg whites
  • 1 t. vanilla
  • ½ c. chopped pecans or nuts of your choice
Instructions
  1. Combine sugar, water, corn syrup and salt in a glass casserole dish.
  2. Cover with saran wrap and microwave on HIGH for 5 minutes. Remove from microwave and remove plastic wrap.
  3. Stir well and return to microwave, uncovered. Cook on HIGH for another 4-5 minutes until it reaches hard ball stage when a little of it is dropped in cold water.
  4. Remove and cool for 4 minutes.
  5. Beat egg whites until stiff peaks form.
  6. Pour sugar mixture over egg whites beating constantly with mixer until mixture starts to lose its gloss and hold together, about another 4-5 minutes
  7. Stir in vanilla and nuts.
  8. Drop by teaspoonful onto wax paper and let cool.
  9. Keep in airtight container.
Notes
*****After using the glass casserole dish, place immediately in warm soapy water to clean the sugar mixture. This recipe came to me through some friends on FACEBOOK. They say it works great. Give it a try!
