Ingredients
  • 1 (17-oz.) can lima beans, rinsed and drained
  • 1 (16-oz) can cut green beans, rinsed and drained
  • 1 (16-oz.) can cut wax beans, rinsed and drained
  • 1 (16-oz.) can kidney beans, rinsed and drained
  • 1 large green bell pepper, chopped
  • 1 large Vidalia onion, chopped finely
  • 1 (2-oz.) jar diced pimiento, drained
  • ½ c. sugar
  • ½ c. olive oil
  • 1 c. white vinegar
  • 2 t. salt
  • 2 t. black pepper
Instructions
  1. Place the rinsed and drained beans in a large bowl.
  2. Add the bell pepper, onion and pimento. Mix well.
  3. In a small saucepan, combine the sugar, oil, vinegar, salt and pepper. Bring to a boil over low heat, stirring until sugar dissolves.
  4. Pour mixture over beans. Stir gently to mix.
  5. Cover and chill for at least 6 hours.
  6. Serve with slotted spoon or drain off the juice and save for another time.
  7. This will keep for at least a week. Keep in refrigerator.
