Limey Dressed Corn Coleslaw
Ingredients
- 2-3 T. smoked chips to put in smoker (use the flavor you like-oak, pecan, walnut, etc.)
- 3 ears of fresh corn, shucked
- ¼ c. fresh cilantro or parsley, chopped
- 2 c. shredded fresh carrots
- 1-2 fresh jalapenos, halved, thinly slice (remove seeds and ribs)
- 1 red bell pepper, thinly sliced
- 2 c. shredded red cabbage
- ½ of red onion, sliced thinly
- 2 c. shredded green cabbage
- ¼ c. canola oil
- ¼ c. rice vinegar
- 3 T. honey
- ¼ c. fresh lime juice
- Salt, black pepper
Instructions
- Place smoke chips in center of bottom of a smoker. Put rack in place.
- Put corn on rack. Close lid and center smoker over a burner.
- Put heat to medium.
- Smoke the corn for 20 minutes. Remove and let cool until cool enough to handle.
- Remove kernels and set aside.
- Combine kernels, cilantro, carrots, jalapenos, bell peppers, cabbages, and onions in a large mixing bowl.
- Whisk together oil, vinegar, honey and lime juice. Season with salt and pepper.
- Toss the veggies with the oil mixture and season again.
