Layered Velvet Berry Cobbler
Ingredients
- 1 T. cornstarch
- 1 ¼ c. sugar, divided
- 2 c. fresh blackberries
- 2 c. fresh raspberries
- 2 c. fresh blueberries
- ½ c. butter, softened
- 2 large eggs
- 2 T. red liquid food coloring
- 1 t. vanilla
- 1 ¼ c. flour
- 1 ½ T. unsweetened cocoa
- ¼ t. salt
- ½ c. buttermilk
- 1 ½ t. white vinegar
- ½ t. baking soda
- Fresh mint sprigs, optional
- Chocolate sauce, optional
Instructions
- Preheat oven 350. Stir together cornstarch and ½ c. sugar.
- Toss berries in this cornstarch mixture and spoon into lightly greased 11x7” baking dish.
- Beat butter with electric mixer at medium speed until fluffy.
- Gradually add remaining ¾ c. sugar, beating well.
- Add eggs, one at a time, beating just until blended after each addition.
- Stir in food coloring and vanilla until blended.
- Combine flour, cocoa and salt.
- Stir in buttermilk, vinegar and baking soda in a 2 c. liquid measuring cup. Mixture will bubble.
- Add flour mixture to butter mixture alternately with buttermilk mixture, beginning and ending with flour mixture.
- Beat at low speed until blended after each addition.
- Spoon batter over berry mixture.
- Bake for 45-50 minutes or until wooden pick inserted in center of cake topping comes out clean. Cool for 10 minutes.
- In a parfait type of glass, spoon some of the cake mixture into bottom and layer with ice cream or whipped cream. Keep doing layers. You can top it off with sprigs of fresh mint and maybe even some chocolate sauce.
