Irresistible Spaghetti with Spinach-Avocado Sauce

8 oz. uncooked whole-grain spaghetti
1 c. baby spinach leaves
¼ c. rinsed and drained cannellini beans (canned)
¼ c. fresh basil leaves
3 T. olive oil
1 T. lemon zest
2 T. fresh lemon juice
Kosher salt, black pepper
2 garlic cloves
1 ripe peeled avocado
¼ c. chopped ripe tomato
3 T. sliced almonds, toasted

  1. Prepare pasta according to package directions, omit salt and fat.
  2. Reserve ½ c. of pasta liquid. Drain pasta.
  3. Combine pasta liquid, spinach, beans, basil leaves, olive oil zest, salt, pepper, garlic cloves and avocado in a food processor.
  4. Process until smooth.
  5. Combine pasta with spinach mixture.
  6. Toss to coat and taste for seasoning.
  7. Sprinkle with tomato and almonds.
