IRRESISTABLE ROASTED BRUSSELS BITES
1 c. panko bread crumbs
½ c. grated parmesan
1 T. Cajun seasoning
½ c. flour
2 eggs, beaten
1 lb. Brussels sprouts, trimmed
½ c. veggie oil
- In large bowl, combine breadcrumbs, parmesan and Cajun seasoning.
- Place flour and eggs into two separate shallow dishes.
- Working in batches, dredge sprouts in flour, dip into egg, then dredge in breadcrumb mixture. Press to coat.
- Add oil into skillet and place over medium heat.
- Add the sprouts to skillet, 5-6 at a time. Do not crowd.
- Cook until evenly golden and crispy, about 2-3 minutes.
- Transfer to paper-towel lined plate.
- Serve immediately.
