Healthy Air-Fried Green Tomatoes

2 large green tomatoes
Salt/black pepper
½ c. flour
2 eggs
½ c. buttermilk
1 c. Panko breadcrumbs
1 c. yellow cornmeal
Olive oil spray

  1. Cut tomatoes into ¼” slices.
  2. Pat dry with paper towels and season with salt and pepper on both sides.
  3. Place flour in shallow dish.
  4. Whisk eggs and butter milk in another shallow dish.
  5. Combine Panko and cornmeal in another shallow dish.
  6. Preheat Air Fryer to 400.
  7. Coat tomato in flour, dip in egg mixture, then press into Panko mixture (on both sides.)
  8. Sprinkle a little more salt and pepper on them.
  9. Mist air fryer basket with olive oil spray and place 4 tomato slices in basket.
  10. Mist top with oil. Air fry for 5 minutes.
  11. Flip tomatoes over, mist with oil and air fry another 3 minutes.
  12. Serve with your favorite sauce.
