Grouper with Cherry Tomatoes and Black Olives
Ingredients
- 2 lbs. fresh grouper fillets
- ½ lb. cherry tomatoes, cut in half
- 4 oz. black olives, pitted, cut in half
- 2 green onions, chopped
- 6 T. extra virgin olive oil
- ¼-1/2 c. dark lager beer
- 3-4 basil leaves
- 6 T. fish or vegetable stock
- Salt and black pepper
- Lemon slices
Instructions
- Heat olive oil in large skillet, saute the green onions.
- Add the seasoned fillets and cook 3-4 minutes. Turning carefully halfway through the cooking time.
- Add the tomatoes and olives and cook another 2-3 minutes.
- Add the beer and allow to evaporate over a higher heat.
- Add hot stock, season and cook another 2 minutes.
- Add chopped basil and serve with fresh lemon slices.
