Grilled Tuna Fish Sandwich

Ingredients
- 6 boiled eggs
- 2 (5 oz.) cans of tuna, drained or (8-10 oz.) fresh grilled tuna
- 1 t. black pepper
- 1-2 T. yellow mustard
- ¼ c. chopped sweet relish
- 1-2 diced celery stalks
- ¼ c. chopped red onion
- Mayo or Miracle Whip (added to get the consistency you like)
- 1-2 slices of provolone, pepper jack, mozzarella or your favorite white cheese
- 1-2 thick slices of fresh tomatoes
- Nice thick crusty bread
Instructions
- Boil eggs. Drain. Peel.
- In a bowl, take the eggs and with two sharp knives, cut up the eggs until you get a nice dice (not too large and not too mushy.)
- If using canned tuna, drain really well. I find canned tuna today, has too much liquid. But if you have fresh tuna, also cut up like the eggs.
- Add tuna to eggs.
- Add the pepper, mustard, relish, celery and onion. Mix well.
- Add Mayo or Miracle Whip a spoon at a time until you get the consistency you like. Taste for additional seasoning.
- To make sandwich: Heat up a grill pan or non stick skillet. Slice bread into nice slices. Brush the exposed sides with olive oil. On one side of bread, put your cheese slices, tomato slices and a nice serving of the tuna fish. Place other slice of bread on top. Place into grill pan and cook 1-2 minutes on each side until it becomes golden brown.
- Remove from pan and let sit for about 1 minute. Slice in half and serve with a nice soup or green or fruit salad.
Notes
*****If you prefer your sandwich cold, go for it. I think you will find this a little different and very delicious!!!!
