Grilled Stuffed Jalapenos

24 fresh jalapeno peppers
¾ lb. bulk pure pork sausage
12 good quality bacon slices, halved
Wooden toothpicks, soaked in water

  1. Wash peppers. Cut slit along one side of each pepper.
  2. Remove seeds, rinse and dry peppers.
  3. In skillet, cook sausage until no longer pink. Season with salt and pepper.
  4. Drain on paper towel.
  5. Stuff peppers with sausage and wrap with ½ slice of bacon and secure with toothpick.
  6. Grill peppers, uncovered, turning frequently, until tender and bacon is crispy, about 12-15 minutes.
    *You can add grated cheese to the cooked sausage if desired.
