Ingredients
  • 4 fresh snapper or halibut, or firm white fish
  • Olive oil
  • Salt, red/black pepper, garlic powder
  • 1 large Vidalia onion, finely sliced
  • 3 T. minced garlic
  • ¼ c. dry white wine
  • ¼ c. green olives, pitted and chopped
  • 3 T. capers, drained
  • 1 serrano or jalapeno pepper, finely chopped, seeded
  • 1 t. sugar
  • 1 bay leaf
  • Fresh lemon slices
Instructions
  1. Brush the fish with olive oil on all sides and season.
  2. Grill for 2-3 minutes per side, depending on thickness of fish. Remove and cover to keep warm.
  3. In a saute pan, drizzle with olive oil.
  4. Add onions and garlic and saute until soft.
  5. Add wine and reduce.
  6. Add tomatoes, olives, capers, pepper, sugar and bay leaf.
  7. Bring to boil and cook until thickened.
  8. Reduce heat, add grilled fish and cook another 2 minutes or until hot.
  9. Serve and garnish with fresh lemon slices.
