Grilled Snapper Vera Cruz
Ingredients
- 4 fresh snapper or halibut, or firm white fish
- Olive oil
- Salt, red/black pepper, garlic powder
- 1 large Vidalia onion, finely sliced
- 3 T. minced garlic
- ¼ c. dry white wine
- ¼ c. green olives, pitted and chopped
- 3 T. capers, drained
- 1 serrano or jalapeno pepper, finely chopped, seeded
- 1 t. sugar
- 1 bay leaf
- Fresh lemon slices
Instructions
- Brush the fish with olive oil on all sides and season.
- Grill for 2-3 minutes per side, depending on thickness of fish. Remove and cover to keep warm.
- In a saute pan, drizzle with olive oil.
- Add onions and garlic and saute until soft.
- Add wine and reduce.
- Add tomatoes, olives, capers, pepper, sugar and bay leaf.
- Bring to boil and cook until thickened.
- Reduce heat, add grilled fish and cook another 2 minutes or until hot.
- Serve and garnish with fresh lemon slices.
