Grilled Creamy Avocado Salad

3 firm, ripe avocados, peeled and halved
Extra-virgin olive oil
Juice of 2 fresh limes
Kosher salt, black pepper
1 pt. multicolored cherry tomatoes, halved
¼ c. fresh cilantro or parsley leaves
½ c. Cotija cheese, crumbled
½ c. pickled red onions (store bought or home-made)*

  1. Preheat grill to 350-400.
  2. Brush avocado halves with olive oil and lime juice.
  3. Sprinkle all sides evenly with salt and pepper.
  4. Grill, cut side down, uncovered, until edges begin to char, 5-8 minutes.
  5. Carefully remove from grill and set aside.
  6. Toss together tomatoes, cilantro with olive oil, lime juice, salt and pepper in a bowl. Let sit for 30 minutes (can be made day ahead.)
  7. Place grilled avocado halves, cut side up on a platter.
  8. Top evenly with tomato mixture, cheese and pickled red onions.
    *Simply mix thinly sliced red onions with some salt, black pepper, olive oil and balsamic vinegar. Let marinade for at least a day. You can also just use plain Italian dressing.
