Ingredients
  • 2 T. minced garlic, mashed
  • Salt
  • 3 T. Miracle Whip or Mayo
  • 3 T. red wine vinegar
  • 1 t. dried oregano
  • ¼ c. extra virgin olive oil, plus 3 T.
  • Freshly ground black pepper, salt
  • 1 large Romaine Heart Lettuce, chopped
  • 1 small head of radicchio, halved, cored and coarsely chopped
  • ¼ head iceberg lettuce, coarsely chopped
  • ¼ head red-tip lettuce, coarsely chopped
  • 2-3 celery ribs, cleaned and thinly sliced
  • 1 small red onion, thinly sliced
  • 1 pt. sweet cherry tomatoes (if you can get the yellow and red)
  • ¼ c. pitted green olives, chopped
  • ¼ c. pitted black olives, chopped
  • 10- peperoncini, chopped or whole
  • 4-8 oz. good quality Italian salami, finely chopped
  • Freshly grated parmesan cheese
Instructions
  1. In a large bowl, mash the garlic with the salt to make a paste.
  2. Whisk in the mayo, vinegar, oregano, then whisk in the olive oil.
  3. Season with salt and pepper.
  4. Add all the remaining ingredients, except the cheese, and toss well. Add seasoning if needed.
  5. Garnish with the cheese, if desired.
