Fresh Fruit Salad with Poppyseed Dressing
Ingredients
- You can select the fruits you like. You can do a mixture of berries or melons or a blend of both. Some suggestions are:
- Strawberries, blackberries, blueberries, raspberries
- Watermelon
- Cantaloupe, Honeydew
- Kiwi, Mango, Pineapple
- Grapes
- Bananas
- Peaches, Pears, Apples
- 1 c. vegetable oil
- ½ c. fresh lemon juice
- ¼ c. white wine vinegar
- ½ c. sugar
- 1 T. poppy seeds
- 1 t. Dijon mustard
- ½ t. salt
- Fresh mint leaves, garnish
- You can save the shell of the melons to serve the fruit in or just use a nice serving bowl.
Instructions
- In a jar, mix together all of the above ingredients.
- Place lid on jar and shake until well blended.
- Store dressing in refrigerator in airtight container for up to 1 week.
- Before serving, let dressing come to room temperature. Whisk until blended.
- Drizzle desired amount of dressing over fruit and gently toss.
- Garnish with fresh mint.
