Grasshopper Deep Dish Cookie in a Skillet
Ingredients
- 1 c. packed light brown sugar
- ½ c. sugar
- ½ c. salted butter, softened
- 1 large egg
- 3 T. bourbon
- 1 ½ t. vanilla
- 2 c. flour
- 1 t. baking soda
- ¼ salt
- 1 c. halved thin crème de menthe chocolate mints
- ¼ c. halved thin crème de menthe chocolate mints
- Ice cream or cool whip
Instructions
- Preheat oven 325.
- Lightly coat 10” cast-iron skillet with PAM.
- Beat brown sugar, sugar and butter with a mixer until light and fluffy.
- Add egg, vanilla and bourbon and beat until blended.
- Whisk together flour, baking soda and salt in bowl.
- Add to butter mixture gradually, beating at low speed until combined.
- Stir in 1 c. halved thin crème de menthe chocolate mints.
- Spread mixture evenly in prepared skillet and top with ¼ c. mints.
- Bake until golden and set, 45-50 minutes. Let stand 15 minutes. Cut in wedges and serve with ice cream or cool whip.
