Ginger Stir-Fry Shrimp and Snow Peas
Ingredients
- ½ c. chicken broth or stock
- 2 T. soy sauce
- 1 t. Chinese chile-garlic sauce
- 1 t. cornstarch
- 2 T. vegetable oil
- ¼ c. fresh ginger, cut into fine matchsticks
- ½ lb. snow peas
- 1 lb. medium peeled shrimp, seasoned
- 4 green onions, thinly sliced on diagonal
- Steamed rice
Instructions
- In small bowl, whisk stock, soy sauce, Chinese sauce and cornstarch.
- In large nonstick skillet, heat oil until shimmering.
- Add ginger and stir-fry for about 1 minute or until tender.
- Add snow peas and cook until crisp tender. The ginger will begin to brown.
- Add seasoned shrimp and stir-fry for about 1-2 minutes.
- Add green onions and cook another 30 seconds.
- Whisk chile sauce and to skillet and cook until shrimp are opaque throughout and sauce is thickened. Season to taste.
- Serve over rice.
