Garlicky Potatoes, Green Beans and Cauliflower
Ingredients
- 1 lb. fingerling potatoes, washed, but do not peel
- Salt
- 3 c. cauliflower florets
- 1 lb. fresh green beans, washed and stemmed
- 3 T. extra virgin olive oil
- 3 T. minced garlic
- ½ t. hot smoked Spanish paprika or regular
- Salt and pepper
- 1 T. sherry vinegar
Instructions
- In large pot, cover potatoes with salted water and bring to boil. Reduce heat to moderate and cook until almost tender.
- Add the cauliflower and green beans to the boiling water and cook until tender, 3-5 minutes.
- In a small skillet, heat olive oil. Add garlic and cook for 1 minute. Add the paprika. Remove from heat.
- Drain vegetables and transfer to serving bowl. Season with salt and pepper and drizzle with the garlic oil and vinegar. Toss and taste if needed seasoning is necessary.
