1 lb. fingerling potatoes, washed, but do not peel
Salt
3 c. cauliflower florets
1 lb. fresh green beans, washed and stemmed
3 T. extra virgin olive oil
3 T. minced garlic
½ t. hot smoked Spanish paprika or regular
Salt and pepper
1 T. sherry vinegar
Instructions
In large pot, cover potatoes with salted water and bring to boil. Reduce heat to moderate and cook until almost tender.
Add the cauliflower and green beans to the boiling water and cook until tender, 3-5 minutes.
In a small skillet, heat olive oil. Add garlic and cook for 1 minute. Add the paprika. Remove from heat.
Drain vegetables and transfer to serving bowl. Season with salt and pepper and drizzle with the garlic oil and vinegar. Toss and taste if needed seasoning is necessary.
