Ingredients
  • 2 heads of garlic, cloves peeled
  • ½ c. fresh rosemary leaves
  • ½ c. extra-virgin olive oil
  • 2 racks of lamb, Frenched
  • Kosher salt, fresh black pepper
Instructions
  1. In food processor, combine garlic, rosemary and olive oil and process until garlic is finely chopped.
  2. Season lamb with salt and pepper and rub the garlic/rosemary oil all over them.
  3. Set racks fat side up in large rimmed baking sheet and let stand for 1 hour or marinate overnight.
  4. Preheat oven 450. Roast the lamb in upper third of oven for 15 minutes.
  5. Turn racks and roast 10 minutes longer for medium-rare.
  6. Transfer racks to carving board and let rest for 10 minutes.
  7. Carve racks between the rib bones and transfer to serving plates.
