
FRESH MEXICAN SHRIMP COCKTAIL

1 lb. peeled, medium cooked shrimp, deveined and halved
3 plum tomatoes, diced
3-4 fresh jalapenos, seeded and diced
1 small onion, diced
1 T. minced garlic
½ c. fresh lime juice
¼ c. olive oil
¼ c. chili sauce
¼ c. spicy tomato juice
¼ c. chopped fresh parsley
¼ c. chopped fresh cilantro
3 T. Tabasco
2 T. prepared horseradish
1 avocado, diced
Kosher salt, black pepper
Tortilla chips
1. Stir together the first 13 ingredients in a bowl.
2. Cover and chill for 24 hours.
3. Stir in avocado. Season with salt and pepper.
4. Serve with chips.
