Recipe By:
  • 1 (8-oz.) pkg. Jiffy Cornbread mix
  • ⅔ c. water
  • 3-4 fresh jalapenos, seeded and minced
  • 1 c. fresh corn kernels
  • ¼ c. fresh basil, chopped
  • Salt, black pepper, garlic powder
  • PAM
  1. In a bowl, combine the cornbread mix with water and stir until well blended.
  2. Add the chopped jalapenos, fresh corn and basil.
  3. Mix well.
  4. Season with salt, pepper and garlic powder
  5. Spray medium sized muffin tins with PAM.
  6. Fill the muffin tins with the batter, almost to the top.
  7. Bake 375 for 13-15 minutes or until golden and cooked through.
  8. Serve with butter, if desired.
*****You can add cheese if you desire. You can also sub the water with milk.
