Fresh Corn Muffins
- 1 (8-oz.) pkg. Jiffy Cornbread mix
- ⅔ c. water
- 3-4 fresh jalapenos, seeded and minced
- 1 c. fresh corn kernels
- ΒΌ c. fresh basil, chopped
- Salt, black pepper, garlic powder
- PAM
- In a bowl, combine the cornbread mix with water and stir until well blended.
- Add the chopped jalapenos, fresh corn and basil.
- Mix well.
- Season with salt, pepper and garlic powder
- Spray medium sized muffin tins with PAM.
- Fill the muffin tins with the batter, almost to the top.
- Bake 375 for 13-15 minutes or until golden and cooked through.
- Serve with butter, if desired.
*****You can add cheese if you desire. You can also sub the water with milk.
