Freaky Frankenstein Cookies

1 (17 ½-oz.) pkg. sugar cookie mix
1 T. flour
½ c. butter, melted
1 large egg
1 t. vanilla
¼ t. peppermint extract
5 drops green food coloring
24 Andes mint candies
Black and white jimmies
Decorating icing

  1. In large bowl, combine cookie mix and flour.
  2. Stir in butter, egg, extracts and food coloring until well blended.
  3. Loosely shape into 6” long roll. Wrap in plastic and refrigerate for 1 hour.
  4. Unwrap and shape roll into a square log using waxed paper. Freeze 30 minutes or until firm.
  5. Preheat oven 350. Unwrap and cut log cross wise into ¼” slices.
  6. Place 1” apart on parchment paper-lined baking sheets.
  7. Place one mint candy on top of each square.
  8. Sprinkle with jimmies.
  9. Bake for 10-12 minutes or until edges are light brown.
  10. Remove from pans to wire racks to cool completely.
  11. Decorate faces as desired with icing.
