Fourth of July Mini Pies
Ingredients
- 48-premade miniature tart shells or phyllo cups
- Blueberries
- Strawberry slices, halved
- 8 oz. mascarpone cheese or cream cheese
- 3 T. powdered sugar
- ½ c. freshly whipped cream
Instructions
- In a bowl beat the mascarpone or cream cheese with powdered sugar with electric mixer, until smooth.
- With clean beaters, whip the ½ c. heavy cream until it forms peaks.
- Fold in the whipped cream with the cream cheese mixture. Gently blend.
- Fill the pre-made shells with the cream cheese mixture. Place on your serving platter.
- Decorate with the blueberries and strawberries to give the American Flag look.
- Refrigerate until ready to serve.
