Fourth of July Mini Pies
Ingredients
  • 48-premade miniature tart shells or phyllo cups
  • Blueberries
  • Strawberry slices, halved
  • 8 oz. mascarpone cheese or cream cheese
  • 3 T. powdered sugar
  • ½ c. freshly whipped cream
Instructions
  1. In a bowl beat the mascarpone or cream cheese with powdered sugar with electric mixer, until smooth.
  2. With clean beaters, whip the ½ c. heavy cream until it forms peaks.
  3. Fold in the whipped cream with the cream cheese mixture. Gently blend.
  4. Fill the pre-made shells with the cream cheese mixture. Place on your serving platter.
  5. Decorate with the blueberries and strawberries to give the American Flag look.
  6. Refrigerate until ready to serve.
