Ingredients
  • YAMS:
  • 1-Wash yams, pat dry, wrap in foil and bake in 375 oven until tender, about 1-1 ½ hours (depending on size of yams.)
  • 2-Remove foil, slit lengthwise, squeeze at the two ends, with a fork fluff the pulp.
  • 3-Set aside and prepare your TEMPTING TOPPERS.
Instructions
  1. SALTED CARAMEL CRUNCH
  2. Blend 10 pitted dates in food processor.
  3. Add enough hot water to form a smooth paste.
  4. Add pinch of salt.
  5. Spread 2 T. on each yam.
  6. Sprinkle with toasted unsweetened coconut.
  7. TURKEY TACO
  8. Warm 1 T. grapeseed oil in skillet over medium heat.
  9. Add 8 oz. ground turkey, 1 t. chili powder, ½ t. cumin and ½ t. garlic powder.
  10. Cook, stirring, until turkey is cooked through.
  11. Add ¼ c. drained and rinsed can of black beans and 2 T. salsa.
  12. Reduce heat and simmer 5 minutes.
  13. Spoon onto yams.
  14. Top with shredded cheddar cheese and sour cream or plain yogurt.
  15. MEDITERRANEAN
  16. Mix 2 oz. feta, ¼ c. chopped pitted Kalamata olives, ½ c. chopped oil-packed sun-dried tomatoes and 1 t. chopped fresh oregano.
  17. Spoon onto yams.
  18. Drizzle with olive oil and season with pepper.
  19. SPINACH-ARTICHOKE
  20. Warm 1 T. grapeseed oil in skillet over medium heat.
  21. Add 1 sliced shallot, saute until tender.
  22. Stir in 15.4-oz. can coconut cream and cook until bubbling.
  23. Fold in 3 oz. baby spinach, saute until wilted.
  24. Add ½ c. chopped canned artichoke hearts and 2 t. apple cider vinegar.
  25. Season with salt and pepper.
  26. Reduce heat and simmer until thickened.
  27. Spoon onto yams.
  28. Sprinkle with paprika and some shredded Parmesan cheese.
