Easy Green Beans with Mushrooms

EASY GREEN BEANS WITH MUSHROOMS
1 ½ lbs. fresh green beans, trimmed
Kosher salt/black pepper to taste
8 oz. cremini mushrooms (cut into thick slices)
1 small red onion (halved and thinly sliced
2 T. butter, cut into a few pieces
¾ c. chicken stock

  1. Spread beans in even layer in large skillet. Season with salt and pepper. Toss to coat.
  2. Scatter mushrooms, onions and butter on top.
  3. Pour in the chicken stock.
  4. Put skillet over medium-high heat and cook, stirring occasionally at beginning and more frequently towards the end. Do not want beans to boil in the sauce.
  5. Cook until beans are still crispy and mushrooms are coated in the thick sauce, about 20 minutes.
  6. Taste for seasoning.
    *If beans are cooked to your liking but stock hasn’t reduced enough, raise heat to high to speed it up. If sauce has nearly cooked off but beans aren’t done yet, add 1-2 T. of stock as needed.
