Easy Cajun Shrimp Linguine
Ingredients
  • 6 oz. whole-grain linguine
  • 2 t. Cajun seasonings, like Tony Chachere’s
  • 1 lb. large shrimp, peeled and deveined
  • 2 T. canola oil, divided
  • 1 c. chopped onion
  • 1 c. chopped green bell pepper
  • ½ c. thinly sliced celery
  • 2 T. chopped fresh thyme, divided
  • 4 T. minced garlic
  • Kosher salt, red pepper
  • 2 bay leaves
  • 1 (14.5-oz.) can unsalted diced tomatoes, undrained
  • ½ c. half and half
  • Grated fresh Parmesan cheese, garnish
Instructions
  1. Cook pasta according to package directions. Drain but reserve ⅓ c. pasta cooking liquid.
  2. Heat large skillet over medium heat.
  3. Combine Cajun seasoning and shrimp in medium bowl, toss to coat.
  4. Add 1 T. oil to a pan, swirl to coat.
  5. Add shrimp to pan and cook until done, 3-4 minutes. Remove shrimp from pan and set aside. Wipe pan clean with paper towels.
  6. Add remaining oil to pan, swirl.
  7. Add onion, bell pepper, celery and 1 T. thyme, cook 3-5 minutes, stirring occasionally.
  8. Add red pepper, salt and garlic and cook another 2 minutes.
  9. Add reserved pasta liquid, bay leaves and tomatoes. Bring to boil.
  10. Reduce heat and simmer 5 minutes or until thickened.
  11. Discard bay leaves.
  12. Remove pan from heat.
  13. Stir in shrimp and pasta.
  14. Stir in half and half. Cook 1 minute over medium heat or until heated through.
  15. Sprinkle with remaining thyme and parmesan cheese, if desired.
