Delightful Creamy White Chili

DELIGHTFUL CREAMY WHITE CHILI
1 T. canola oil
1 lb. chicken breasts, boneless, skinless and cut into ½” cubes
1 ½ t. garlic powder
1 (16-oz.) container chopped onion
32 oz. box chicken stock
2 (15.5-oz.) cans cannellini beans, rinsed and drained
1 (4-oz.) can chopped green chiles
1 (11 oz.) can canned corn
1 t. salt
1 t. ground cumin
1 t. dried oregano
1 t. black pepper
1 t. red pepper
½ c. heavy whipping cream
1 c. sour cream
OPTIONAL TOPPINGS:
Tortilla chips
Shredded cheddar cheese
Fresh jalapeno peppers, seeded/minced
Green onions
- In large saucepan over medium heat, heat oil.
- Add chicken, garlic powder and onion and saute chicken until no longer pink, about 5-6 minutes.
- Add broth, beans, chiles, salt, cumin, oregano, black and red pepper.
- Bring to a boil.
- Reduce to a simmer for 30 minutes, uncovered.
- Remove from the heat.
- Stir in heavy cream and sour cream.
- Top with your favorite toppings.
