EASIEST SHRIMP AND ARTICHOKE DIP
Ingredients
- 1 c. chopped onion
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 6 celery stalks, finely chopped
- 1 bunch fresh parsley, finely chopped
- 2 lbs. small shrimp (or if medium, cut into pieces)
- Olive oil
- Salt, red/black pepper
- 3 c. grated parmesan cheese
- 2 cans artichoke hearts, drained and chopped bite size
- 2 c. mayo or Miracle Whip
- ½ c. hot mayo
- Tabasco to taste
- Paprika
Instructions
- In a skillet, drizzle with olive oil.
- Season shrimp with salt, red/black pepper and garlic powder.
- Saute shrimp in the skillet until they turn pink.
- Drain the shrimp from the skillet.
- In a bowl, combine the shrimp with the chopped onion, bell peppers, celery, parsley and artichoke hearts.
- Mix well.
- Add the cheese and mayo.
- Taste for seasoning. If you like it a little spicier, add some Tabasco.
- Place in a baking dish sprayed with PAM.
- Sprinkle top with paprika.
- Bake at 350 for 45 minute4s or until golden brown
Notes
*****You can also add additional grated parmesan cheese on top before baking.
