Down-Home Stewed Zucchini and Tomato Dish

DOWN HOME STEWED ZUCCHINI AND TOMATOES DISH
3 medium zucchinis, cut into ¼” slices
Salt, black pepper
1 Vidalia onion, thinly sliced
1 green bell pepper, thinly sliced
6-8 Roma tomatoes, thinly sliced
2/3 can condensed tomato soup, undiluted
1 t. dried basil
1 c. shredded cheddar cheese
Minced fresh basil, garnish

  1. Place zucchini in greased 3 qt. slow cooker and season with salt and pepper.
  2. Layer with onion, green pepper and tomatoes (season all.)
  3. In bowl, combine soup and basil and season. Spread over the tomatoes.
  4. Cover and cook on LOW for 3-4 hours or until veggies are tender.
  5. Sprinkle with cheese.
  6. Cover and cook 30 minutes longer or until cheese melts.
  7. Garnish with basil.
