Down-Home Stewed Zucchini and Tomato Dish
DOWN HOME STEWED ZUCCHINI AND TOMATOES DISH
3 medium zucchinis, cut into ¼” slices
Salt, black pepper
1 Vidalia onion, thinly sliced
1 green bell pepper, thinly sliced
6-8 Roma tomatoes, thinly sliced
2/3 can condensed tomato soup, undiluted
1 t. dried basil
1 c. shredded cheddar cheese
Minced fresh basil, garnish
- Place zucchini in greased 3 qt. slow cooker and season with salt and pepper.
- Layer with onion, green pepper and tomatoes (season all.)
- In bowl, combine soup and basil and season. Spread over the tomatoes.
- Cover and cook on LOW for 3-4 hours or until veggies are tender.
- Sprinkle with cheese.
- Cover and cook 30 minutes longer or until cheese melts.
- Garnish with basil.
