Ingredients
  • 1 (10-12 oz.) container fresh zucchini zoodles
  • 1 (10-12 oz.) container fresh butternut squash zoodles
  • 1 lb. fresh pencil thin asparagus, tough ends cut off
  • 4 oz. sliced fresh mushrooms
  • 1 (8-oz.) jar good quality tomato bruschetta sauce
  • Olive oil
  • Salt, black pepper
  • Juice of 2 fresh lemons
  • Freshly grated parmesan cheese, optional
Instructions
  1. In large non-stick skillet, drizzle bottom with olive oil and place over medium heat.
  2. Saute the asparagus tips for 2-4 minutes or until crispy tender.
  3. Add the mushrooms and saute for another 2-4 minutes.
  4. Season with salt and black pepper.
  5. Add the zoodles and saute until tender, usually 5-8 minutes.
  6. Add the bruschetta sauce and lemon juice.
  7. Saute another 2 minutes.
  8. Taste for seasoning.
  9. When ready to serve, sprinkle with a little parmesan cheese, if desired.
Notes
*****You can change up the zoodles or just use one type. You can also change up the veggies like broccoli, sugar snaps, green beans, etc.
