Delicious Squash Gratin
Ingredients
- 3 T. butter
- 1 medium Vidalia onion, chopped
- 1 T. chopped fresh thyme
- 1 small butternut squash, peeled and cubed
- 1 small your choice of a another winter squash, peeled and cubed
- 2 T. minced garlic
- Salt, red/black pepper
- 1 c. chicken or veggie broth
- ½ c. heavy cream
- ¼ panko bread crumbs or regular bread crumbs
- ¼ c. grated parmesan cheese
- ¼ c. Freshly chopped parsley
- ½ c. grated gruyere cheese
Instructions
- Preheat oven 400.
- Melt 2 T. butter in a large ovenproof skillet.
- Add the onion and thyme and cook until tender.
- Combine the two squashes in a microwave-safe bowl with 1 c. of water. Cover with plastic wrap and microwave until squash is just tender, about 5 minutes.
- Drain and add squash to skillet with the garlic. Season with salt and pepper.
- Cook and stirring for 3-5 minutes.
- Add broth and cook until mostly absorbed.
- Stir in heavy cream and cook until slightly thickened.
- Melt remaining 1 T. butter in microwave and toss with breadcrumbs, parmesan and parsley. Season with salt and pepper.
- Sprinkle over squash.
- Top with gruyere cheese.
- Transfer skillet to oven and bake until golden, about 30 minutes.
- Let rest for 5 minutes before serving.
Notes
*****If you have leftovers, this makes a nice stuffing for bell peppers, tomatoes and potatoes.
