Delicious Squash Gratin

Ingredients
  • 3 T. butter
  • 1 medium Vidalia onion, chopped
  • 1 T. chopped fresh thyme
  • 1 small butternut squash, peeled and cubed
  • 1 small your choice of a another winter squash, peeled and cubed
  • 2 T. minced garlic
  • Salt, red/black pepper
  • 1 c. chicken or veggie broth
  • ½ c. heavy cream
  • ¼ panko bread crumbs or regular bread crumbs
  • ¼ c. grated parmesan cheese
  • ¼ c. Freshly chopped parsley
  • ½ c. grated gruyere cheese
Instructions
  1. Preheat oven 400.
  2. Melt 2 T. butter in a large ovenproof skillet.
  3. Add the onion and thyme and cook until tender.
  4. Combine the two squashes in a microwave-safe bowl with 1 c. of water. Cover with plastic wrap and microwave until squash is just tender, about 5 minutes.
  5. Drain and add squash to skillet with the garlic. Season with salt and pepper.
  6. Cook and stirring for 3-5 minutes.
  7. Add broth and cook until mostly absorbed.
  8. Stir in heavy cream and cook until slightly thickened.
  9. Melt remaining 1 T. butter in microwave and toss with breadcrumbs, parmesan and parsley. Season with salt and pepper.
  10. Sprinkle over squash.
  11. Top with gruyere cheese.
  12. Transfer skillet to oven and bake until golden, about 30 minutes.
  13. Let rest for 5 minutes before serving.
Notes
*****If you have leftovers, this makes a nice stuffing for bell peppers, tomatoes and potatoes.
