Delicious Mini Spinach Frittatas
Ingredients
- 1 c. whole-milk ricotta cheese
- ¾ c. grated parmesan cheese
- ⅔ c. chopped fresh mushrooms
- 1 (10-oz.) pkg. frozen chopped spinach, thawed and squeezed dry
- 1 large egg
- ½ t. dried oregano
- 1 t. salt
- 1 t. black pepper
- 24 slices pepperoni
Instructions
- Preheat oven 375.
- In small bowl, combine all the ingredients except pepperoni.
- Place the pepperoni slice in each of 24 greased mini-muffin cups.
- Fill ¾ of the way with cheese mixture.
- Bake 20-25 minutes or until completely set.
- Carefully run knife around sides of cups to loosen and lift.
Notes
*****Easy can double recipe and freezes well.
