Delicious Mini Spinach Frittatas

Ingredients
  • 1 c. whole-milk ricotta cheese
  • ¾ c. grated parmesan cheese
  • ⅔ c. chopped fresh mushrooms
  • 1 (10-oz.) pkg. frozen chopped spinach, thawed and squeezed dry
  • 1 large egg
  • ½ t. dried oregano
  • 1 t. salt
  • 1 t. black pepper
  • 24 slices pepperoni
Instructions
  1. Preheat oven 375.
  2. In small bowl, combine all the ingredients except pepperoni.
  3. Place the pepperoni slice in each of 24 greased mini-muffin cups.
  4. Fill ¾ of the way with cheese mixture.
  5. Bake 20-25 minutes or until completely set.
  6. Carefully run knife around sides of cups to loosen and lift.
