Delicious Lemon Roasted Onions

2 large red onions
2 large Vidalia onions
½ c. Marzetti Simply Dressed Vinaigrette-Lemon
1 T. Dijon mustard
1 T. minced garlic
Salt, black pepper
Extra virgin olive oil
Freshly chopped parsley, garnish

1. Preheat oven 375. Line a baking sheet with foil and spray with PAM.
2. Remove the stem end of each onion (top) and carefully slice the bottom part of the root end, leaving the root intact. Peel the onion.
3. Stand each onion root end up on a cutting board and cut onion into 4 wedges.
4. Place the wedges in a large bowl.
5. Drizzle with olive oil and season with salt and pepper.
6. In a small bowl, combine the vinaigrette, mustard and garlic. Whisk until blended.
7. Take the onions and spread on the baking sheet.
8. Drizzle the vinaigrette mixture all over the onions. With your hands, mix so that the whole onion wedges are coated.
9. Bake in oven for 30-45 minutes or until tender and browned. Toss once during the cooking process.
10. Remove from oven and with a slotted spoon, mix the onions but try not to break them up. You want to get some of the dressing back on the onions.
11. Sprinkle with more salt and pepper if needed and garnish with parsley.
*****Can be served hot or room temperature. A nice change!
