Delicious Chocolate Marshmallow Bars

3 (5.3-oz) boxes shortbread cookies
1 stick butter, melted
1 (14-oz.) can sweetened condensed milk
1 c. sweetened shredded coconut
1 c. semisweet chocolate chips
1 c. mini marshmallows

  1. Preheat oven 375. Line 9” square baking pan with parchment paper, leaving 2” overhang on all sides. Spray paper with PAM.
  2. Pulse cookies in food processor until finely ground.
  3. Drizzle in melted butter and pulse until crumbs are completely coated.
  4. Press mixture evenly into bottom of prepared pan.
  5. Pour condensed milk over top and gently spread to edges with back of a spoon.
  6. Mix together shredded coconut, chocolate chips and mini marshmallows.
  7. Place on top of crumb mixture and press down gently with your hands.
  8. Bake until golden brown around edges and beginning to pull away from pan, 25-30 minutes.
  9. Let cool in pan for 3 hours.
  10. Use the parchment overhang to lift bars out of pan.
  11. Slice into bars with serrated knife.
