Delicious Baked Eggplant Spears

1 medium eggplant, cut into spears (leave peeling on)
Olive oil
Kosher salt/black pepper/ garlic powder
1 c. Italian bread crumbs
½ c. grated Parmesan cheese
2 eggs, lightly beaten
Dipping sauce (your choice)-Marinara, Ranch, Catsup, any Fancy Dressings, etc.)

  1. Preheat oven 450.
  2. Line baking sheet with parchment paper and spray with PAM.
  3. Place eggplant spears in bowl and season with salt, black pepper, garlic powder and drizzle with olive oil. Mix to coat spears.
  4. In another bowl, combine breadcrumbs and cheese.
  5. Place beaten eggs in another bowl.
  6. Dip spears into beaten eggs, then breadcrumbs.
  7. Place on baking sheet.
  8. Spray PAM over the spears.
  9. Bake 10 minutes, then flip and cook another 5-8 minutes or until golden. Serve hot with your favorite dipping sauce.
